Nobody seems to know why the series is in hiatus, I read somewhere that the author only posted it in his blog but didn't tell why. BTW, in which language have been you purchasing the volumes?

i know for sure that ubel blatt is published in french and italian.
i was going to buy the italian volumes when the hiatus started.
now i have put on hold the purchase until ub is running again if i don't see a rush in the story.

My only guess as to why Ubel is in hiatus would be because the mangaka wants to focus on his newest works. Two of which started this year and one of his oneshots has become a series as well. Hopefully he will start working on Ubel once he gets the hang of things...

There was talk about the hiatus ending in February, although I'm not sure if it actually came to pass. In any case, the author had previously stated that he wished to end the hiatus sometime this year (http://www.manga-news.com/index.php/actus/2010/11/08/Interv iew-dEtorouji-Shiono - Its in French, so if you can't understand it, use Google Translate/Babelfish).

According to the website mentioned above, he plans on continuing it this year and that the story is barely half done.

Keep in mind that several other mangas are like that(vagabond,hunterxhunter etc).
Even the dark tower series from Steven King(damn i love this series) took him 30-40 years to finish it
