I absolutely love mangas where the hero/heroine raises a child! Sadly, there is not a lot out there sad . I prefer the plot to involve something supernatural or fantasy-like but I will try out anything! So if you would please post a suggestion I would really appreciate it!

Ones I have read:
Beelzebub
(there are several more but i just can't remember the names)

it's more about the making of a baby, but there is a section in the beginning where the protagonist couple take care of a child.

akkan baby

Childcare+supernatural

Babysitter Gin: I read it long ago, but I think he can use some sort of magic to make children happy.
Yamamoto Zenjirou to Moushimasu: the girl can see ghost.
Kure-nai: female lead is a 7-year-old child. he's sort of her bodyguard, but he also takes care of her. Lots of action, if you like Beelzebub, I think you'll like this too.
Daa! Daa! Daa!: the baby is alien.

No fantasy/supernatural thing (slice of life):
Gakuen Babysitters: orphaned boy takes care his baby brother.
Flat (AOGIRI Natsu)
Mako to Rumi to Chii: by Osamu Tezuka, so the art is old. it's about his children.
Papa to Arukou: shoujo, the child is a robot
and don't forget Yotsubato!, it's a must read biggrin

How about RG Veda? It's one of my favorites... It's a lot better than it seems, in my opinion.

I'd also like to third Love So Life and second Flat (AOGIRI Natsu)!!!

You should try Hitori-tachi (aka Forever Honey) It's a one shot, but it is completely worth it. It's one of my favorites. (I suggest you don't read the tags before reading it.)

Ookami Kodomo no Ame to Yuki (Wolf Children: Ame and Yuki)

The story is about a girl, Hana, who raises and takes care of her two wolf children by herself
Spoiler (mouse over to view)
as a result of the wolf father passing away.
