Trinity Blood
Blood+ - this one got on my nerves sometimes, but overall pretty good.
Devil May Cry - only had time to watch the first couple of episodes, but so far so good imo
D.Grey Man - (anime and manga if you haven't read it) one of my favorites ^^

Manga:
Claymore - decent, some people don't like the art though

meh -- i think of more later >.<

For manga, you might want to take a look at IO. It seems to meet all your criteria, and is a pretty decent read to boot.

Eyeshield 21, is football (American) themed. But I, a female who doesn't even understand the real game - Decided to break down and get a football for dummies guide - Not that the tile reflects the soul...or the mind. I just don't know how I got caught in this addiction... It is set in high school - but with out all the silly romances and drama. Deals with football and getting stronger; to become a better football player. Ahh a sport themed manga without the cross dressing and weird love triangles... really refreshing.

Endo Short Stories, is a series of short stories that are very real and gritty. Plenty of drama, and action; plus no shyin' away from the baseness that makes us human - Nor do they pansify it; And turning what proves that humans have a depth of soul (that binds us willing or not to each other); Into some Shitty Lifetime (blegh...) Drama.

Ludwig Revolution, is hard to explain - It's not your ordinary fairytale, that's for sure. Red Hood is a bitch you don't want to cross; that's all I'll say.

My Name is Zushio, is funny and bizarre, but not finished being scanned. Makes you laugh out loud - I mean snort milk out your nose - Cartman style funny.... I'm so jaded that anything that can do that for me gets big praise...

Old Boy, is one of the more mature gritty manga that I've read. Violence - Check, Ecchi - Check
Actual Plot - Check. This I know you'll like.

Ludwig is the guy you should really avoid crossing. I'm just saying.

It's a good choice of manga.

I'm sure Spanky would agree with this. bigrazz But I recommend Ef - A Tale of Memories as Romance Anime, I guess. Has some drama. But it's good. ;D

Uhm, Gundam00 is also good for anime. If you want some action in high quality try Tokyo Majin. Clannad is also a good Romance anime~

I definitely recommend Darker than Black, if you haven't seen it yet. D: And that's all for anime~

For Manga, I recommend:

For anime definately samurai champloo and maybe trinity blood but from what ive read in this forum so far maybe not
for manga maayyybee http://www.mangaupdates.com/series.html?id=1448(midori no hibi) and http://www.mangaupdates.com/series.html?id=259(eyeshield 21) the second one is a sports manga but you eventually find yourself cheering for the characters.

and a third vote on ludwig revolution seriously interesting manga eyes

I'd say REC. The anime and manga if you're looking for romance.

Desert Punk (anime) - Action, ecchi, slight romance, 24 eps. I'd say that fits your criteria.

Big-O (anime) - Don't get turned off just b/c it's mech, that's only to tie the complicated, psychological plot together.

Hoshi no Koe (anime) - "Brilliant" is usually the first word that comes to mind when I think of this. although it's only about 30 min. long (literally) it tells a beautiful story of true love. I've heard the manga is quite good as well.

Gantz (manga) - For the love of God, stay away from the anime you'll miss Nishi's awesome rant but just stay away from it. Give it a chance, it may seem like a violent fan-service ridden gore fest. But the characer development and realistic portrayal of an extreme situation make it brilliant.

Negative Happy Chainsaw Edge - Only 3 chaps in but it plays out like FLCL in that it's a coming of age story that's shown through an odd situation. It's a little gloomy at times but also very funny.

DOGS + Dogs: Bullets & Carnage - Can't recommend these enough. Probably one of my favorite series of all time. The mangaka is a little on the lazy side, but it has a great blend of action, comedy, and drama.

Bitter Virgin - I'm sure you've at least heard of this unless this is your first time on the web. If so I don't think I need to explain the beauty of this series.

Basilisk (manga or anime) - Don't let the violence fool you, this series is actually very deep and poetic, and really touching. Kinda like a japanese version of Romeo and Juliet only with manly ninjas killing each other and kunoichi who remove their clothes to use their powers.
