I suppose I should apologize for my mistake, and not adhering to what just as tarfuro has stated. To be fair, if we are going to be picky, Birthday also consists of 2 chapters, which no one questioned. ( sorry Akari d: )

Happiness (FURUYA Usamaru) - All the one=shots in this anthology are incredible, and since Room of Clouds is 2 chaps, I went w/ this one b/c it stuck w/ me the most.
Can't remember anything else off the top of my head right now.

Well I have a pair that have really made me think!!! Or at least notice them XD
Seinen has Hotel by Boichi because it's about of what's to come one day in the future... It makes you actually think of your own future and the oen you'll leave for your kids...
Yaoi has NightS by Yoneda Kou, because it's..... Deep... has a good dialogue with a remarkable speech.... Nice plot and a hot sex scene withot going all Hentai or stuff like that XD
Besides those I can only think of 1/6000 Honesty which is not as deep as you would expected yet is a regular read, the problem is that it's really long for a one shot (100+ pg!!!) and Island too... But I prefer Hotel over Island actually

Akazukin to Yasashii Ookami is well-done and quite pretty, but it really isn't deep. There are far better ones here in that respect.
One I've read recently that's quite good is Shoujo Manga. It deals with how little your existence is worth and how quickly a life can go downhill.
As for yaoi, Netsu no Ori is pretty deep as yaoi goes.

The only one shot that really comes to mind for me is Hotel, most of the one shots I read are either silly little yuri love stories or seinen stories where I can't get into the characters, but Hotel was a very good change.

Ooooh... nice thread (though I'm not sure if anyone reads it anymore), but to add to the list since I don't think it's been mentioned yet:
Refrigerator Chocolate - the 4th story in Nanairo Sekai. Really sweet... makes me want to eat some dark chocolate...

The story is really nice!
[m]LOVE HONEY[/m] is really touching.
