This is a weird request lol.
Um... I like it when there's this adult man who a girl in a shoujo/josei romance falls for, but he actually does the right thing and either turns her down flat or in some other way totally avoids having a relationship with her, even though it's obvious he is developing feelings for her. Idk, I just find it cute and chivalrous and stuff. "My filthy hands shall not ruin this young blossom," etc. Lol.
Otherwise I tend to get creeped out by these older men in romance mangas that seem to be taking advantage of a young girl - the only way I don't get creeped out is if the older guy is genuinely, totally trying to run in the opposite direction. Lol! I mean then it becomes obvious that he's a decent guy, that maybe the girl actually has good taste, that maybe they'd actually be good for each other (when the girl's a little older), etc. For me it's like some kind of reverse psychology or something, but this is the one way to get me to really enjoy an older-man/younger-girl romance, guilt-free.
Obviously they'll end up together at the end but the older guy should be avoiding the relationship and hiding his feelings (or trying to, lol!) for most of the manga, which means he should only finally agree to be with the girl near the end, after a long struggle. It should be an "honorable defeat"... He should have fought a good fight.
I KNOW, WEIRD REQUEST HUH. But you'd be surprised, there are actually many stories like this. I'd like to find even more.
Examples I have already read or am already reading:
Kaze Hikaru - I'm actually kind of afraid this guy won't admit to his feelings even if it kills him... Literally.
Skip Beat! - resistance is futile, Ren. Lol.
Hana no Namae - a long battle, a possibly sudden defeat?
Love So Life - it's too damn sweet of you, Matsunaga-san, to resist your girl-touching urges so manfully...
Dengeki Daisy - most chivalrous pervert ever. <3
All these stories have an older guy who hides, denies and/or suppresses his own romantic feelings for the girl in order to do what he thinks is the "right thing" for her. I love that.
You can see that I prefer shoujo/josei, but in rare cases I guess this might happen in shounen/seinen too? (Like maybe in Blood Alone? Idek.) Fire away. 
Edit: Can someone remind me whether Kanon has this or not?

I'm not sure if this is exactly what you are looking for, but you could try Suki by CLAMP.
EDIT: I ignore the summary... it is misleading.

Ai Hime - Ai to Himegoto came to mind, but I'm not sure how long he struggles. I remember her turns her down at first.
Midnight Secretary - He's not terribly much older than her, but he does struggle with having feelings for her.

Jinbe and Baby Pop are the only ones that I remember.

Wait a minute... 7th Period is a Secret. should work and Aiko Desho! too... though I don't think you have to worry about her succeeding for this one.
There's also one that I can remember but I not the name.
Saha was working on it but I don't think it was an h-manga... though, it was still loli.
It is called Kodomo no Jikan... now, I never read it; so, I can't say for sure how it turns out, but it's an option.

I'd say Koi Kaze if you don't mind incest. Also possibly Gunslinger Girl but it's not the main point of the manga at all, and the possibility of a not happy ending are very high. Still I think the relationships between Triela/Hillshire and Henrietta/Jose are really close to what you asked, especially the first couple.

Seinen, and it's not the main plot of the manga (though the title is derived from this), but Until Death Do Us Part seems to fit.
If it's not right, then at least it's something that hasn't been recommended so far. (Though the relationship between the female & male lead is one of an age gap, and the male lead does avoid any relationship with her in that respect).
I'm glad for your question though, as it's given me some reading material that I wouldn't have had otherwise.
(WTB a fully translated Kanon, that story looks interesting)

Oh, you know Ten no Ryuu*Chi no Sakura kind of works as well, though the lead might not really be resisting because of the age difference.
And I second UDDUP... though there is an emphasis on the action (not sexual but gun/sword fights) rather than the romance.
