I'm actually thinking that it might be Zero. I don't have the manga on hand at the moment, but during the part with Shizuka, Yuuki, Zero and Kaname, Kaname had the chess board set up with only four pieces. When he bested Shizuka, he destroyed the white queen piece, which left the pawn, the king, and the white knight.
Here are my thoughts on who's who:
Kaname: King. The most important piece on a chess board. Without the king, there is no game.
Yuuki: The pawn. Pawns may seem useless, but they have the unique ability to turn into queens. In light of chapter 36, this makes a LOT of sense.
Zero: The only piece left. The knight. I don't think that the part in volume two with White Lily was just randomness on the author's part, since the piece on the chess board was a white knight.
Either way, these are only my thoughts. ^^ And since I don't have the manga with me, I can't be certain about everything, but...
You did a good analysis. Nicely put.
I am thinking it would be Zero also although I am not a fan of his. I even think that Zero and Yuuki will end up together in the end based from the flow of the story. Aw, my poor Kaname.

I think Zero is the knight! read chapter 39...I think it gives hints, that he's the knight
Spoiler (highlight to view) Zero is the only one that can kill Ridou (not even Kaname can kill Ridou)....he's the most powerful vampire hunter, since he has 3 purebloods blood in him: Shizuka's, Yuuki's, and Kaname's blood.Also, Kaname says to Zero "The chess piece I so carefully raised for 4 years...will soon become the 'King'..."
Edit: after reading chapter 41 it kinda looks as if Yuuki might actually be the knight, I might be wring though

Zero, a hybrid "Vampire x Hunter" that will do anything to keep Yuuki safe from some retarded Vamps. To put things simple, "THE" Vampire Knight

Okay, in my theory here's what we got: Kaname is the king Yuuki is the queen while Zero is the knight
It's like, the queen is really good friends with the knight and she's inlove with the King very much but she doesn't realize that whom she really loves is not the King but the Knight who has always been protecting her..?
gah me and my stupid theories.. though I really hope that this series ends up with a Zero x Yuuki thing but if not then.. it will be disappointing for it's fine..

Zero is the Vampire Knight. Seems like Yuuki is more into Zero than she is to Kaname. and we have seen a lot of Zero's fighting scenes. We have never seen Kaname fight. I guess that doesn't really matter.. but. I just like Zero. lol

Taking a non-biased view, I'd say after that chess analysis that Zero is indeed the "knight." Note that in chess it is not a knight's job to protect (it's capabilities are simply far more offensive.) Its job is to get rid of the enemies of the King/Queen, and capture the enemy king. It is also sacrificed on occasion to protect the Queen (since it is normally in an offensive position as is the Queen, compared to the King playing hide and seek.) So from a purely technical standpoint, and from Kaname's words to Zero that he would keep him alive to ensure he would protect Yuuki as he had always done... Well... I'd say it's Zero.
As far as my biased standpoint, I would like it to be Zero, if there is a character in particular that is -the- vampire knight. This is because it would mean he is considered the main male protagonist... And while girls can go swoon over Kaname, Zero has a much more 'real' personality than Kaname does. As annoying as it can get sometimes, Zero has insecurities and very strong emotions, as well as a clearly afflicting and troubling past. This just makes him a more realistic and easily identifiable character.
Kudos to that analysis though previously. Though i'm too lazy to check up and see who to give the kudos to.

I agree. It looks that way after ch. 39 that Zero is the knight, but the very last page of ch. 41 does make me believe Yuuki might be it as well, but I still like to believe that Zero is the Knight
Kaname, like everybody else has said, seems like the "King"...also he shows a big part in the story, but (once again) ch. 39 shows that in the end he can't do anything.
Spoiler (highlight to view) since Zero is supposively the "ultimate Vampire Hunter" or something...and is suppose to break the curse of Rido
Also, I just think Zero is cool enough to be a knight (but i'll admit, I'm biast )
