I just thought of another two -
Billy Bat. I can't personally attest to this; I haven't read it. The protagonist is a mangaka (or comic-book author?)- but the primary focus may not be his job. Still looks kind of interesting though. (It's Naoki Urasawa's so it must be okay.)
And again, I haven't read this, but it is a manga about a fashion-designer and sounds quite unique - Cloth Road

Hachi no Su - "Two government workers perform a very unusual job, for the same pay as every other paper-pusher! Kaoru Jinnai and Yamazaki Yuusuke pick up corpses to be cremated before organ harvesters can reach them in post-apocalyptic Japan. What seems to be a simple task takes on complication after complication, from the looting, gunslinging harvesters to clingy family who don't want to let the bodies go just yet."

How about Bartender? There's only so much technical stuff that you can get about mixing drinks and I find the amount of reverence with which its written a bit bizarre but I'd still highly recommend it. The main character is just so sweet.

Hanako to Guuwa no Tera-main is an "allegory detective" though the story mainly deals with the supernatural, it can sometimes get a little bloody...

I'd like to add the delightful (er, given the horror aspects) Honey Comb, in which the two main protagonists are corpse-collectors who must get to those corpses before the evil organ-harvesters do. Lol. (I'm sorry, I just find the idea hilarious. Even if the story is quite serious in itself.) Really great manga, I strongly suggest you check it out. It has lots of interesting banter between the two chars, despite the dismal nature of their job - kind of reminds me of the crazy-ass funny banter between the two mafia guys in Pulp Fiction, even though they're just about to make a hit. Apparently, proximity to death (or other people's deaths) increases a human being's capacity for sardonic humor. Who knew?

Shigofumi - Can't find it here but the anime is really good. I guess it's kinda like Letter Bee except this one is about letters from the dead to the living. The profession is kinda explained (I think..haven't watched in awhile) but the stories are really good
