Agree with xxkuroxx and KadraDS, but on the josei side Hapi Mari,Butterflies, Flowers and there's another one but I forgot the name (she was a college student and he was teacher. She looked a lot his wife that past away and there was a kid). Try stuff about office workers.

(female lead is a vampire who looks pretty young/is in a young body)

I can also recommend "until death do us apart" and "faster than a kiss" which was mentioned above.

The more i think about this category of manga the more i remember
Kure-nai 33 chapters ongoing, shounen
The One ongoing,shoujo (its similar to Skip Beat though its about modeling instead of acting)
Rurouni Kenshin complete, shounen
The Bride of the Water God shoujo (from the first look you could say its more woman and young boy, but that only counts for the appearance during daytime)

My favorite other than what others have already recommended:

Miman Renai - I think it's really cute in a different way than normal shojo

You might have read some of these but....

Dengeki Daisy ---- girl and her school Janitor, he's only a Janitor as a cover.
Faster than a Kiss ---- girl and her English teacher
Kiss --- girl falls in love with piano teacher
Sekai de ichiban daikirai -- girl with an older guy which she hates at first.
Shiawase Kissa Sanchoume -- girl and elder co-worker
The Palette of 12 secret colors ---- kinda fantasy manga, girl and the school "doctor"
Miriam ---- takes place in wild wild west, a wild girl and a gunslinger

Does it count if the male is EXTREMELY old? like eternally youthful kinda guy?

Hana to Akuma -- the guy is demon, but even if he wasn't there would still be an age difference since she's only a young teen.
Immortal Rain --- girl and immortal 600+ year old guy

I know A LOT more of manga like this but I'm not sure if you're looking for non-human guys?
