How about Hellsing? That's the only one that comes to mind.( not really evil, but more of a badass)
also Bastard, but the guy is human, but evil(also more like badass than evil).

Dance in the Vampire Bund there's really no human in this story at all... Blood+ there are some element of her trying to maintain her humanity when her vampire power awakened, but she was really raised to be a human from the beginning. basically the story is about her embracing her vampire power/heritage/destiny. Witch Hunter well, the series haven't ended yet so you never know, but so far witches seems to be either born evil or born good, and they stay that way (they're trying to destroy humanity). no conforming here. Bride of the Water God in this world, God outnumbers human. Gods are Gods, nothing's gonna change. Princess Resurrection vast majority of characters are nonhuman. and they stay that way.
I don't understand your Bella Swan example. In twilight, from the beginning the Cullen family were vegetarian. And Bella became a Cullen. so of course she's going to be a vegetarian vampire. Isn't her behavior exactly what you expected?

Those evil vampires ARE evil. The good guy does become really...cold, and evil after he turns evil too. The matter is a bit more complicated than I make it out to be. It is from the POV of a good vampire girl whose objective is to be badass and kill all the bad vampires, but it's still good nonetheless.
Kamisami Hajimemashta...or however it's spelled. As of now, the gods, tengus, etc. act very much like it...the servant acts like one, doesn't fall in love with a human, blablah.
Obviously a manga, that one.

Not from their POV, but the Sookie Stackhouse novels do a pretty good job of portraying the supernaturals as distinctly separate from humanity (and mostly brutal and evil, especially the vampires). Also, she's not a normal human herself. Though there's some sex, violence and bad language.

second this. I forgot to mention this one last time. but I think this is not completely what Dragonfiremule wants. vampire who act like non-human only Strigoi who play antagoist role along the series, main character who is Dhampir and Moroi act like human. but this is a good novel actually, recommend it!

The Devil Ororon Maybe.. He did callously slaughter the demons that went after him.. Hes callous but not really vicious.. Vampire Fantasy I think this applies.. Im not sure if this is the manga im thinking of.. Vampire eating unsuspecting travelers..

Hmm, I wonder if Baccano! (Novel) counts? Humans-turned-Immortals all around. The two or three most twisted characters are actually human, but most of the Immortals are mafia, so it's not like it's lacking in that area.

yeah funny as hell ........the theif couple cracked me up ( isaac and maria)
yea its got immortals and 1 android girl with feelings for the the one of main guy....they hook up i think been 1 1/2 yrs since i saw it

I read this several years ago but "The Dracula Tape" by Fred Saberhagen should fit.
A series of books (this being the first) with the story written from Dracula's POV. Not as... lush... as the Anne Rice novels. These stories are written by an SF novelist, are a good read.
While this Dracula isn't necessarily EVIL (do evil chars. really think of themselves as evil?), he certainly is a cold-hearted SOB.
I think the author also wrote one from Frankenstein's POV, but I haven't read that one.

The point isn't about the actual story; it's just giving an example of the kind of thing that Dragonfiremule is looking for. Basically, taking a familiar character and tweaking the circumstances so the concept of an inhumane non-human is more understandable.
