I'm looking for a series where the main character powers up and the story spends a fair chunk of the story focusing on the character's training.

You know, like Veritas, or The Breaker, or HSDK. Dragon Ball's a good example too. Nearly forgot Dragon Ball

Oh, and Bambino. Certainly doesn't have to be training for a fight.

I`m guessing from your request that you like fighting shonen,
so about fighting shonen with training i would suggest those 3

I don't remember how much training it actually shows (although I definitely remember some), but it's categorized under Hard Working Protagonist, the rest of which you may want to check out.

Was looking through the threads linked above, and I have to second Major, although you have to watch the anime, it stays true to the manga (from what I've heard anyways) up to Season 6, which is done a bit differently, but it still reaches the same ending.
