This got me thinking is there any manga I could read where the main protagonist agrees with this statement and lives by it. I've already read Iris Zero and I don't want a character that hides in normalcy but rather embraces life of the day to day and is content with an average plebeian existence. Content, nay, happy with the small joys and sorrows of life.

Definitely YKK.

In a way, I suppose the father from Hanaotoko fits as well. He does have grand aspirations of becoming a pro baseball player, but never actually acts upon furthering that goal and really does enjoy the simple pleasures of life.

The main character of Merupuri really, really wants to be a normal person. Rather than dreaming about being a princess in a castle, she idolizes a miniseries on country folk and dreams of getting married and leading that kind of simple life. She likes mundane things like household chores and loves simple living. Of course what does the manga do? It throws a prince from a magical kingdom in her way, which is about as far from a simple life as you can get.

You probably won't enjoy all of the series since the girl obviously ends up with the prince, but you'll probably like the first half of it where the girl is teaching the little prince to do household chores and run errands. She does, thankfully, remain a practical character throughout all four volumes.

It's not a manga and you might have read it before:
Siddhartha by Herman Hesse
The main character kind of gets to that perspective of thought after he goes through a bunch of stuff in his life. It's packed full of beautiful lines and wisdom
