To take care of a sibling, relative or (friend's) child due to absent parents or no family help for example and is very much absorbed in her role of almost full time parent to whoever they are caring for, picking up from childcare themselves going to school, doing housework making lunches and meals etc etc.

Second this, tags are our friends! The babysitter tag does not have that many manga in it unfortunately, and not some examples I can think of that fit your requirements (e.g. Hikoukigumo).
