Mysterious Girlfriend X (see my sig).
This is by far my favorite series, and I've read all sorts of romance series.
Not sure if this is what you're looking for, but as it's only 68-69 chapters, just give it a go

Well I think Orange (TAKANO Ichigo) is a very unique manga. It's about a woman who regrets the fact that Kakeru (the person she liked) is no longer there due to an accident (she doesn't say what kind of accident though). So she sends a letter to her 16-year-old self and tells her to be near him. In the future she has married her best friend Suwa and has a son. The art is good and the story, already interesting, is made even more amazing by the way it is presented. It's not one of the usual shoujo manga and the ending is unpredictable! I really like it!

Well, thanks for your suggestion, wow, that's already a load of stuff to read.
I guess I'll start with My Mysterious Girlfriend X. I've already come across it a few times but it sounded REALLY weird.
But Imma try now.

One? Only one? I apologize. I cannot do that. Never checked out your lists, so I'm just spewing whatever comes to mind.
Hot Blooded Woman I end up recommending this a lot lately. I guess I like it because it didn't feel mushy or cliche. It's been a good five years since I've read it and I can't get it out of my head. 
Full Moon o Sagashite The anime could never touch this. The themes inside just make the romance so much more touching.
Fruits Basket Again, anime could never compare.
Absolute Boyfriend and Fushigi Yuugi (like the prequel better) by the same author. After these three I could never read another one of her works again because they're all angsty.  But incredibly memorable all the same and fit the term "unique".
Kimi Wa Pet One of the few manga I've read that had a business woman as awesome as the lead. She's one of the few that despite crying a bit didn't make me want to go in the story and beat some sense into her. To me, it just made her realistic.
Don't cry, girl Short and a re-read. For the laughs than anything else. 
Cheese In the Trap Starts out slow, but is really addictive once you get read it. It's ongoing.
The fact that I remembered how to spell the sames (although actually writing them out is a chore) is a mega bonus for me.

You want something unique? You could try:
- Koharu no Hibi - stalker girl
- Choku! - this one is mostly comedy
- Kanojo wa Sore o Gaman Dekinai - really weird, but rather unique
- Otoyomegatari - good stuff

My Mysterious Girlfriend X is the weirdest romance I've ever read. Thanks for that. I guess I'm waiting more releases now.
