I haven't watched much anime, but so far... I liked:
Death Note OST 1 -- I'm a big fan of guitar riffs / drum & bass... it enhanced the mood of the anime and listening to it by itself is great. Instruments do have a voice!
Honey and Clover -- the ending theme(s) would creep up within the last 30 seconds of the episode, letting you know that a chapter has ended. I also liked the use of the insert songs to give it a "modern" feel (like watching an indie movie or a drama for lack of a better term). The piano covers of some of the songs kinda made my heart-break.
Oh yes... for my varying music... I'd listen to Hanamaru Kindergarten: Childhood Memories album... the ending themes (a different one for every episode of the anime) were great... granted, I liked some more than others, but it was nice.
That was purely OSTs... I would actively listen to these in the car / on my iPod. As for opening and ending themes... too many for me to list. It really depends on my mood.

I'm not much of a person for taking close attention's to the OST of anime's but the only one I really listened to was Death Note's 2nd OST 'What's up, people?!'.

tenshi no uta-romeo's blue skies(one of the best animes ever made)

My list
1. Cowboy Bebop has the best ost ever. I love everything from cowboy bebop to no disc to future blues. I've listened to the osts multiple times but I've never been able to complete anime series.
2. Ghost in the Shell - I love this this series and the music is extraordinary from Kenji kawai to Origa and yoko kanno. no other series I've seen has provided the quality of atmospheric music that gits has provided.
3. This was a hard one because i love Trigun and Samurai champloo but i feel that Nujabes and fat Jon made a slightly better ost for samurai champloo
