Hey,
I'm looking for something similar to Sora Log where the main characters got together without one confessing their feelings and asked the other to date them. So it can be a subtle clue that they drop that they're together and the other understands that and picked up the clue. Possibly, later they might ask the other to clarify what status they are in but please don't let it be too much drama. Thanks!

Mars perhaps? I believe they didn't even say "I love you" when they started going out, I might be wrong though. Say I love you might be like that too? I'm not too sure either (never finished any of them though).

The main characters in 14-sai no Koi by MIZUTANI Fuka never confess but both of them are aware that they're dating.
Same goes for MATSUMOTO Tomo's Kiss, and I doubt that the couple in the latter would ever talk about their relationship They just feel it.

14-Sai no Koi definitely fits well, in Say I Love You they end up confessing and stuff i think though the guy does what youre looking for and assumes theyre dating while the girl is really confused when he tells her this

SARASHI ASOBI by Tobina Touya has pretty subtle love (at least in my opinion). It's quite cute and the love seems to form seamlessly and naturally in a very sweet way.

I just skimmed your public lists and well, since there isn't much left to recommend, I had to dig up some slowly updating Josei from a corner of my brain.
You might try BX and & by OKAZAKI Mari both of which have romantic relationships with a subtle note or ones that are heading into that direction.
I don't know if you're already reading it but one of the main couples from Futago by IKETANI Rikako also slide from friendship into a romantic relationship without any announcement.
NISHI Keiko's Otoko no Isshou is likely to fit your criteria, once the main couple starts dating.
3 am Dangerous Zone by NEMU Youko matches your request. It's a slice of life workplace romance.
