such as Gorio where the main is usually a wimp but once he is unconscious he can kick ass

actually even in the breaker if you consider insane willpower as a skill it would work... i mean he was capable of making anyone fear him even though he had barely any strength in comparison.... not quite a standard situation 
and for my recs samurai deeper kyo, mahou tsukai kurohime, and shingetsutan tsukihime should all match up pretty nicely
oh and there is a webcomic called ability which is exactly what you're asking for. he is, so far, completely unable to control the ability while conscious, and even when unconscious it doesnt work quite right.
negative side is that while all of these focus on hand to hand/close combat(aside from kurohime) none of them can be completely classified as martial arts... though you will probably find the fights in ability to be acceptable(main char always fights bare handed as do most opponents)

^correct, but i also have to wonder how being able to heal any injury does not qualify as a powerful skill
. it wouldnt be a direct power up if it werent for the speed/strength stuff, but having the only priest class character in the world on your team is definitely not something you would want to pass up... battle is easier when you dont die
