I'm not much of a games person (mostly I just play The Sims, Rayman Origins and The Neverhood) but I've been under a lot of stress lately and I think playing games would help me forget about my problems for some time (books and music don't seem to work anymore) and I'll be very grateful for some recommendations. Here's what I'd like:

- must be available for PC
- not first-person (I tend to get very stressed playing first-person games, I keep thinking something is behind me - I know, it's pathetic)
- without jumpy moments (when everything seems calm and SUDDENLY something attacks you)
- basically something relaxing that doesn't require much thinking (like Rayman Origins or The Sims) or something very interesting and absorbing that requires a lot of thinking (like solving mysteries or riddles)
- a game with plot would be nice, but I don't know if there's any matching these requirements

I hope it's not too specific!

First of all, there are a ton of threads of elsewhere on the internet asking for relaxing games out there. Some of these are free and online so no money or installation required.

Since you like The Sims, you may like other simulation games or games with a time management element, e.g.:
-Rollercoaster Tycoon
-Theme Park World
-Dungeon Keeper
-Diner Dash
-Sally's Salon

These sorts of games are popular on Facebook, Steam and also on mobile platforms so there are more recent games you could look into also (my examples are pretty old).
You might also like visual novels and/or dating sims. They're usually focused on story and characters rather than interactivity, though some have RPG elements. If you'd like to try otome games (dating sims aimed at female players), I'd recommend Yo-Jin-Bo and Heileen to begin with.

Since you like Rayman Origins (have never played, but I assume it's a platformer?) you may like:
-Sonic Adventure DX and Sonic Adventure 2 (platformers with pet raising element)
-Bastion (beautiful indie RPG)
-Portal and Portal 2 (puzzle/platform)
-Pid (sidescrolling platformer)
-Minecraft (sandbox with building/crafting/exploring, can turn off enemies with peaceful mode)
-Terraria (like a 2d Minecraft, no peaceful mode, rather a steep learning curve)
-Beyond Good and Evil

Personally, the games I play when I want to forget about my problems are RPGs with an absorbing story, like the Mass Effect, Dragon Age or The Elder Scrolls series. However, I think these might be too dark/serious or have too much combat for you? TES is also best played in first person but it does have a (slightly clunky) third person mode. However, TES games can be very relaxing in that they're very open world so you can just go exploring instead of doing the main story.

Unfortunately a lot of games I'd like to recommend are only available on consoles as far as I am aware (though some, particularly the older ones, can be played pretty well on emulators on PC). If you didn't have this restriction I'd also recommend:
Playstation consoles: Littlebigplanet, Flow, Flower, Journey, Ratchet & Clank series, Spyro the Dragon series, Jak & Daxter series, Shadow of the Colossus, Ico, Kingdom Hearts, Final Fantasy series (there are FF games on other consoles too, and a PC port for at least one)
DS/3DS or Wii consoles: Professor Layton series, Harvest Moon series, Rune Factory series, Animal Crossing series, Pokemon series

I think there are a lot of games on the DS or 3DS like the ones you're asking for, so it might be worth investing in one of these consoles. Some DS models will be very cheap by now and the 2DS is a cheaper alternative to a 3DS.

Thomas Was Alone and Cave Story are fun games. Also, I've heard that Nightsky and Paper's Please are great as well.

These are a few games that aren't well known.

Brutal Legend fits all those descriptions
it's available on Steam and standalone.
It's in third person perspective
It's mostly a midless hack and slash with some elements of RTS
It also has a plot. I've heard the main story mode is rather short, but in between those main missions, there is a ton to explore and find which is also rather calming. All the heavy metal helps blow off steam as well, but maybe you're not into metal. In which case that may exacerbate your problem, because all the music is metal. You can always turn it off, I guess.

If that's not your cup of joe, there's also Dreamfall; the Longest Journey. There are some ridiculous puzzles in it. that is one epic story.

In that same vein there is Syberia One and Two. The second one starts off almost immediately where the first one ended. Wonderful story and puzzles everywhere.

And I just noticed this thread is old. Ahh well laugh

Portal 2, it's first person BUT there are no enemies. It's just puzzle solving.
