That contains a male lead that's turns into something such as a vampire/werewolf/monster of sorts. I like ones where the MC has to fight his inner urges for blood/flesh and occasionally gives in like Zero from Vampire knight or Kaneki from Tokyo Ghoul.

Any and all help would be appreciated. I could use some good stuff with the above requirements to read.

Apocalypse No Toride : Although you'll have to wait some time for the MC to "turn into something".
Shingeki no Kyojin : Same as above.
Parasyte
Claymore
Priest
Kurozakuro
Ajin

I'm checking out your first recommendation and it just seems like another zombie apocalypse manga. I've already read Parasyte. I watched the claymore anime and if I'm not mistaken the MC is a female. I don't remember the guy turning into anything. I don't know about priest and I lost interest in Kurozakuro after he joined the hunters.

Nah Apocalypse No Toride isn't just "some zombie manga", it's probably the best imho. You should read it at least until they meet the zombie leader, if you still don't like it after that... Well your loss.

Sorry about Claymore, missed the guy part of your post.

And Priest is GREAT. It has a berserk/hellsing vibe.

You could also try older mangas like :
3x3 eyes : MC becomes a zombie
Devilman : Very old, it's the ancestor of all these types of mangas with a hero turning into a demon/monster. Many spin-offs/sequels.
Rosario to Vampire and sequel : If you can stand harems, the MC at some point becomes some kind of monster too.

your lists are not public so i don't know what you have already read but here are a couple that fit.

Blue Exorcist -didn't really "turn" into something, he was already a demon its just the powers were suppressed before, and he sometimes goes on a rampage when he uses his demon powers for too long.

Densetsu no Yuusha no Densetsu might work too, but the manga does not go that far because its based off of a novel, it has an anime though. and you will have to wait awhile to actually see what he is.

First of all, welcome to the site. I guess, you have yet to look through the categories (e.g. Becoming Something Inhuman, Unique Infected Protagonist and Body Horror)?

Apart from the above mentioned titles, I only remember one series about a plagued male lead who must fight himself in order to retain his humanity: Dawn - Tsumetai Te by UEDA Shinsyu. Reads like a zombie-action-suspense manga.
