If you liked Tokyo Ghoul, you should check Apocalypse no Toride. The MC doesn't become as crazy, but he undergoes a transformation too. And it's ongoing so things might become better.

Abnormal-kei Joshi For all around crazy/insane characters, it's a good one. Not much action focused though, more like dark comedy.

If you don't mind real crazy then maybe Ichi the Killer or Shamo.

I'm not sure what you mean by crazy/insane, since I'm still reading Tokyo Ghoul and he's not insane yet. But try I Am a Hero:

MC has a mental illness. He hallucinates things and he knows it. So when people started eating each others faces off around him he isn't sure if it's just his head being 'imaginative' again or if the world really just turned upside down.
