I've been reading Re:Monster, and want those similar to it. Video game JRPG-ish storylines, fantasy, leveling up and that sort of thing. Are there any others?

Highly recommend Overlord, The Legendary Moonlight Sculptor (Novel), Ark (novel), Konjiki no Moji Tsukai (Novel) (for now there is no harem with the MC so refreshing )
You could try Suterareta Yuusha no Eiyuutan (Novel), Monster no Goshujin-sama (Novel) , Knights & Magic (novel)(start a bit dull)...etc
You said that you don`t mind different formats so how about Play to Live by D. Rus? Its very popular VMMORPG series by a russian author. There are two books out in english and it`s extremely good.

Mushoku Tensei (Novel) have about 20 vol now, i love that it try to explain the nonsensical trope of this genre
