I'm looking for a manga where the protagonist was once evil and violent, but has now turned into a very good person.

Gangsta.: Cursed, though this one is a spinoff of Gangsta., which you should probably read first to get full understanding of the plot.
Noragami, though good/evil isn't very black and white in this one.
Sengoku Youko, an enemy in the first half of this manga becomes the main hero protagonist in the second half.
Shikeishuu 042, the protagonist is an ex-criminal whose sentence involves community work, which he has to get through peacefully or risk death.
Shut Hell, though depending on what you think, you can argue that the protagonist hasn't entirely made this transition yet.
Vinland Saga, probably the manga that fits your request the most.
You can also probably count Accelerator in the To Aru Majutsu no Index series, but it's such a large franchise with so many characters that I find it difficult to recommend.
edit: Forgot one. While it's never explicitly shown, it is heavily hinted that the main protagonist in Shibatora used to be a terrible delinquent, though he's basically the paragon of goodness now.

How about Trinity Blood? Main character is stated to have killed over a million people in the past.

Angel Densetsu - people misunderstood the fact that a scary face doesn't mean that he is a violent person. "A pure person trapped in a scary-faced man."
Great Teacher Onizuka - former gangster becomes a teacher, oops the title says it all.
Wild Life - not evil actually but he is problem child that found his career that changes his life.
Samurai X - perfect fit
and also use "search this forum", there are many posts like this long ago.
