I'm currently obsessed in mangas that shows how a person live with his chosen profession.

Does the protagonist have to be hard-working and/or successful at his profession? If not, try A Worthless Person.
You might also want to check out stuff in the Biography/Autobiography tag.
For example, series such as Doing Time, A Drifting Life, and Disappearance Diary might interest you.
If fictional (fantasy/futuristic sci-fi) jobs are ok, I recommend Saturn Apartments and Noramimi.

In lieu of Gin no Saji, Moyashimon?
Health: A lot of doctors, realistic and unrealistic ones: Wild Life (veterinarian), Dr. Koto Shinryoujo, Dr. Frost (psychologist), Team Medical Dragon, Saijou no Meii. I like Nurse Aoi but it's not available online.
Music: Nodame Cantabile (pianist/conductor)
Interesting profession: Nanatsuya Shinobu no Housekibako (Gems Appraiser, basically NINOMIYA Tomoko's manga have interesting topics), C.M.B. (museum curator?), Ghost Hunt (ghosthunter), Tokkyuu (lifeguard), Real Clothes (saleswoman), Uchuu Kyoudai (astronaut), Planetes (futuristic space janitor), Aria(Martian gondolier), One Outs (gambler? baseball?)
There are a lot of manga on showbiz (including singer, dancer, actor/actress, dubber, mangaka), sports, detective, cooking (I still recommend Yakitate!! Japan though), period-based profession (like shinsengumi) or school clubs, so I omit those. They are more common, but there are a lot of interesting clubs, including uncommon sports. If you're interested, maybe I'll recommend some.
I think I've read manga in a lot more topics, let me re-add some later.
