I think that my favorite oneshot is Reading Time, which is the 5th one from Mizukami Satoshi Tanpenshuu. It's only 23 pages long and really simple but somehow the message really reached me.

Hana no Mori no Majo-san is very lovely. I wish someone would do the one-shots from Tsukiyo no Toratsugumi by the same mangaka.

And I really liked Sunflower (KIM Yeon-joo) as well. I was surprised to see that it was a manhwa; it's probably the first time I'd read a manhwa that I could describe as 'touching'.

The Time Milk Wound the Spring -- so funny and quirky!

Williams is good too. The magic of childhood indeed!

I didn't read lots of one-shot manga but if there's one I liked, this is Zashiki Onna, a horror manga.

It may not be the scariest manga ever but when I read it, it scared me so much that I threw the volume away at once. I was still too young and now I wouldn't do something like this, but that shows how a one-shot manga can be great.

I'm surprised that it wasn't mentioned here, but Hox made a list of oneshot recommendations. Some of the titles included in the list have already been mentioned in this thread (like Hotel and Forever Honey). While I can't say that they're all good or moving (I've read them all save for the ones by Kago Shintaro found in the separate list. Some titles are also comedy.), the list is definitely worth your time.

Allow me to add L∞P to your list of titles. You might also want to check out Kitoh Mohiro's compilations, though his work might be a bit of an acquired taste haha.
