The best one I have read, being unusual, with a great story, and with a manly uke:
Kyuuso wa Cheese no Yumewomiru and it's sequel seems as good as it: The Carp on the Chopping Block Jumps Twice

Then..I have long list, because I don't like girly ukes or stereotypes, I will post those ones with a non-girly uke, I'll tell you the best ones I have found:

Surf Junkie Mukizu ja Irarenee and Buddy system as well as its sequel XI. All of these mangas are from Sadahiro Mika She likes to draw hot men, and sometimes you would see the reversi (when an uke can be seme, by the way I am looking more reversi characters), these ones are explicit and very...eh, hot..

Sangen tonari no tooi hito,Hand which,Boku no Shiru Anata no Hanashi and Akanai Tobira are unusual yaois..you never know who would be the seme or uke, sometimes you see girly ukes but they are not annoying..they have really great characters, and unusual couples. All of them from Suzuki Tsuta, this is my favourite mangaka right now, she draws beautifully and almost all her stories are great.

Don't Stay Gold by Yoneda Kou has a non-girly uke, I have started to read few works from this mangaka, her drawing style is similar to Tsuta's one, so I love it, and well even when you can see the stereotypes her stories are somewhat different and great, I especially recommend Ore ni Koi Shite Dousunda, I have only read a chapter but it is so good so far..

Renai Junkie, really unexpected roles here.

Totally Captivated is a shounen-ai but there is no girly uke here, and the story is really good.

Wild Darling great story.

Ikoku Irokoi Romantan this is what I call a manly uke XD..Yamane Ayano has a lot of interesting stories and they are all manly, her drawing style is great btw.

Aruji no Oose no Mama ni good one.

Ashita mo Tanin lovely story.

Have you tried Karamete de Kudoite? Has your type of uke, but in the third volume since it's a side pairing. But the volume is dedicated to that couple. I don't really think you have to read the first two volumes to grasp the story, I have, but it's not required.

Maybe even Punch Drunk Babies? But more or less the second couple.The uke is cold, cool headed. The only thing is I believe they are already in a relationship, or the seme believes they are...^-^'''

Haru wo Daite Ita is pretty good, I am not sure if anyone mentioned it.

My favorite ones are:

These ones are really good! They are funny non-cliche shounen ai's/yaoi's.

Lotus Eater - The uke is not exactly cold, but he is calm and collected. He is openly gay and casual about his own sexuality. He also has a very healthy sex-life, he's not slutty and not a blushy virgin either. Very refreshing story about a normal guy.. ^_^

Ubawareru Koto Marugoto Zenbu - This is hillarious and for once it is the uke that is frivoulous and running off with hot girls while the seme sits faithfully at home.. XD

Breakfast Club - The second main couple (Hiroki X Miki) wich starts at volume 2(though both characters appear in volume 1 aswell) fits your criteria perfectly.

Ashita mo Tanin - Cute, and with a coolheaded uke..

La Satanica - A cold uke that is purposely stringing the seme along, KNOWING that the guy likes him and finding it to be fairly amusing. This is a must <3

Sangen Tonari no Tooi Hito - This is great and almost focuses more about the main character than their relationship, id say.. Reccomended.. <3

What about Haru wo daite ita.

At first, love wasn't really mutual and Iwaki san is quite the cold type. But be carefull it's a very hot yaoi. there's also a OAV.

Love Control has my favorite tough uke, because he's also a super-successful professional who is totally cool and in control of his life. When the seme tries to TAKE some of that control, he retaliates with a cold shoulder and frankly rather mean insults... God I love 'im. Such a tsundere!
