Jagaaaaaan- Guy becomes a monstery thing and the plot is him fighting other people turned monsters to not become one fully.
Apocalypse no toride- prison in an apocalypse
Seraph of the end-
Pupa - brother/sister team where both are fighting against turning into monsters. This is probably the closest to Tokyo Ghoul in terms of feeling.
Kimetsu no yaiba Another brother/sister team however:
D. Grayman I think it had something similar to that plot later on, and there are elements of that dropped into the plot as a whole. Though not as clear cut as the other recs are.
Kouya ni Kemono Doukokusu-It fits the criteria, though its a bit of an older style with more slapstick comedy in the background. Base plot is interesting though.
