The first one is about this girl who wants to defeat some demon king guy. Somehow that same guy she wants to defeat ends up being her partner in her travels. If anyone knows the name of this manga or something similar to it, please give the name.

I also remember this extra about some person who can control dolls.

The second one is quite similar. I think it's about this girl who want to become a doll maker. She somehow meets the doll maker she idolizes and becomes his student. There's this method on the doll making that i remember. They kinda take something from their model and afterwards create the doll.

I think these might be shoujo, but I'm not too sure.

Again, if you know anything similar to these, please give the name.

First one sounds like Watashi no Ookami-san. I'm not sure though.
