I'm looking for series with a lot of lore regarding its universe and characters such as Tower of God, Lord of the Ring series, The Elder Scrolls series or Wheel of Time series.

These series only loosely fit what your looking for. Honestly its hard to find something that goes into that much detail, especially in a manga or manhwa.
Your probably better off looking for some novels shy

Five Star Monogatari This thing have a gigantic lore, it have many side lore books, and when I say many, I'm not kidding.

Tolkiens other books are really good, The Silmarillion, Children of Hurin, etc. Artemis Fowl series by Eoin Colfer are pretty good too.

Read most of those, but yeah... I really didn't expect to see many series with that level of detail but it's at least worth a try.

Most fantasy/sci-fi manga has some kind of lore involved. I'm not entirely sure how deep/extensive you want the lore to be, so I'm just going to list some that has some intriguing backstory/world-building.

I'm not entirely sure this is the kind of "lore" you're looking for, but the Umineko no Naku Koro ni series does a lot of interesting things with setting and backstory, so you might want to check that out too.

Also, if you don't mind anime, I would highly recommend Last Exile (and tentatively recommend its sequel: Last Exile - Ginyoku no Fam).

I second Berserk and Pandora Hearts. The detailed and complex universe of Tower of God that has lots of background information outside of the story reminds me of the Type Moon universe. You should check out the Tsukihime manga and visual novel, Melty Blood, the Fate/Stay Night visual novel and the Fate/Zero anime, and the Kara no Kyoukai movies. Then there is the Type Moon Wiki for all the background info. Stay away from the Tsukihime and Fate/Stay Night anime though as they aren't nearly as good as their source material. There is also Kagetsu Touya the fan disc sequel to Tsukihime.

I really loved Nasuverse and have already read F/SN, Tsukihime and Kagetsu Tohya visual novels before, as well as watched the Kara no Kyoukai movies (haven't played Melty Blood or read F/HA yet though, since I couldn't find a full translation for F/HA). Of course, I've also browsed Type Moon wiki when I got a bit lost while playing Battle Moon Wars. I have read Berserk (one of my all time favs), but it doesn't really fit what I'm looking for since most of the details were fairly shallow with more emphasis on character development and less on world building. What I'm looking for is a in-depth explanation to the universe and although Berserk achieved this somewhat with its explanation of magic and whatnot, the rest of the world feels quite shallow in comparison to the likes of what you would find in Nasuverse.

Spice and Wolf was an amazing series but I'm not sure about the lore part. I suppose economics and such do fall under lore and in that case it definitely fits what I'm looking for, but it felt kinda iffy for some reason. Perhaps it's because economics feels mundane compared to magic and war.

I've read some of your suggestion, Suxinn, in the past few days (I tend to avoid typical shoujo art like the plague so...), and I'm sorry to say that most don't really fit my criteria. I'm not just looking for general world building, but more intricate world building where the author doesn't just give an explanation but also provide some seemingly useless details that enhances one's understanding of the world. A good lore rich series is often characterized by a stronger focus on the world vs the characters. That's not to say the series aren't interesting though as I'll probably keep reading some of them. It could also be because I set my expectations to be too high but that can't be helped. Last Exile was awesome though. I loved the first anime but the sequel is meh at best. I guess I'll download umineko sometime but for some reason I've been putting it off roll
