Lots, but the one with the biggest impact/ the one I remember the most are
Watashitachi no Shiawase na Jikan
My Girl (SAHARA Mizu)
Utsuro no Hako to Zero no Maria (Novel) mostly at Daiya's arc (volume 5 & 6 )
Penguin Brothers One of my first manga, which is why it really has deep impact on me.
You may want to check this thread, it was about manga that change the way you think/ had an impact in your life.

This is a very subjective topic, I think. The manga that had the most inspiring, life changing moment for me... wasn't a very good manga. Though to be fair I read it when I was considerably younger and more impressionable.
OTOH, GTO, Knite, and Cat Street were good and inspiring.

Spoiler (mouse over to view)
It was the moment when the protagonist has to choose whether to sacrifice his friend or let the world be destroyed. He says that if there's a peace that can only be achieved by killing, he doesn't need it... and then finds a way to save the world without any sacrifice.
It's probably unrealistic to expect this irl but it's not a bad mindset to have.

I'm not sure what you are trying to find but the one that comes to mind is Vitamin.
There is also Taiyou no Ie but that's only because i can relate to the protagonist so i am unsure whether or not it's inspiring.

Not very noticeable by just the cover and initial story plot, but Fullmetal Alchemist. Both the manga and anime were both mind blowing and life impacting.
