kyou kara hitman would be a good example for this. he's a normal office guy, sucks up to his boss, makes stupid jokes, and has a relatively normal life..... other than the fact that he is frequently sending bullets through peoples heads in his off time.
also i'd rather that the person be stable during these periods, alternate personality is somewhat acceptable, but no mental instability like ichi the killer

kimi no knife was perfect, and while killer stall isnt quite on topic(due to him trying to recover) it's close enough and it's a good enough read to make up for it (kinda drawn out at times tho :/)

This is all I can think of at the moment and it's a oneshot.
Kare no Satsujin Keikaku He's not unstable to my memory. Considering his motive (if you can even call it that) I don't know if he's what you call "normal". Other than plotting murder, he seems to have a relatively normal life.

Really a stretch: Sun-Ken Rock. He only pretends to be a normal person to the girl he likes though, and he really just beats people up. As I said, a stretch, but oh well.
