The best examples of what I'm looking for have a *.

I'm currently reading 7 Seeds and Masca.

(I'm not looking for old manga in particular lol)

I'll throw Pandora Hearts out there as well, even though it's technically in the shounen demographic......yeah, nothing like what you'd expect from your typical shounen, and it is longer (and a complex read on top of that) and it's in the fantasy genre.

And Kamisama Hajimemashita is technically a long shoujo fantasy, but it's not really epic like the ones you mentioned.

You might also like some epic fantasy shounen, like:

Tsubasa: Reservoir Chronicle (it's similar to Pandora Hearts)
Kubera (Korean webtoon)

Also Juuni Kokki the anime ver.
Dokuhime it's not that long (only 5 vols) but it's really good.
