I love about everything from Nobuo Uematsu, I specially love Yoko Shimomura's Kingdom Hearts piano collection albums and most of Joe Hisaishi's works, but my favorite composer of all times is Yoko Kanno, may it be her classical pieces or not, but if you ever have the opportunity to listen to her album "The Creation" with songs such as "Cain and Abel" you will learn about how much of a mastermind she is. I guess that that is the only album in my whole iTunes that I've rated 5 stars, the WHOLE album, I am not a religious person, as you may realize being the album's main subject, but I just love the music by itself. Also, listen to her piano piece "Yin no Piano" and the album http://en.wikipedia.org/wiki/23-Ji_no_Ongaku it's not a classical style album, but another example of her greatness xP
As for more known composers/pieces I love songs such as "Claire de Lune", "Moonlight Sonata", some of Mozart's work's and Vivaldi's Four seasons.
I am a huge fan of soundtrack music, so I will just name some of the composers I recommend that may fit a more classical taste, Phillip Glass (listen to his Metamorphosis piano pieces), Danny Elfman (It is just great his musical knowledge range, from Spider Man's soundtrack, through The Nightmare Before Christmas and Oingo Boingo's "Stay") and also, I think that everyone loves his works but not everyone knows exactly who made the songs, John Williams, the master behind Star wars, Harry Potter, E.T, Indiana Jones and others. Well, whenever the topic is music and specially soundtrack music or classical/modern classical music I get a bit overexcited so, if you want to know about any other songs I like to listen to, in a more specific way (just in case you feel like you have a similar taste as mine or anything like that) feel free to ask me ;D Because whenever it is music talk I just love to help and to get to know about new ones I haven't heard of ;D

Camille Saint-Saëns - Danse Macabre
I freaking want to dance to it.
Other favorite is the Butterfly Lovers Violin Concerto, by Chen Gang and He Zhanhao.
