I can't think of any manga unfortunately, but if you're okay with anime, Michiko & Hatchin and Seis Manos are a couple of good series that come to mind.

I was pleasantly surprised to learn that Chad (aka Yasutora Sado) from Bleach is half Mexican. It's only briefly mentioned when you first meet him, but he is a pretty big character in the series.

A good BL title that has more focus on a Hispanic character is Suzuki from 10 Dance. He was born and raised in Cuba and that has affected the styles of dancing that he excels at.
