A simple concept, and I've seen at least very similar things done several times. More often it's a boy falling for a girl WHILE helping her win her love though, like Toradora. What I'm looking for is quite simple: a boy loves a girl, but that girl loves someone else. Unfortunately for the girl, she's having trouble getting together with her love for various reasons. The first boy then steps in and tries to do what he can to help the girl, maybe with her knowledge and agreement, maybe in secret. He works hard to help his love find happiness, and all the while the girl's getting to see more of him and his good points, gradually affecting her feelings toward him as well.

Reading the series now. While it's cool, it feels more like Toradora as I mentioned before, with a boy falling in love with a girl as he tries to help her and winning her heart at the same time, as opposed to what I was saying: a boy who's already in love with a girl who has a crush on someone else, helping that girl get together with her crush either directly or in secret from her, and ending up winning her heart as he struggles to help her win that other boy's heart. Sort of like Keima and Chihiro initially appeared to be in The World God Only Knows, except that the matchmaker is in love with the girl he's helping to catch her own target.

So the mc helps the girl trying to get with someone else, but in the end she realizes that she's fallen for the MC?

Ore Monogatari!!

He thinks the girl he falls for likes his best friend like every other girl he had a crush on, but gets her and it turns out she always liked him. It happens early on and its about them dating.

I guess it's not really what you are looking for, but it's got that feel sorta from the MC's perspective.

I feel like I've read other stories like that as well though...

I love that series too, though I've only watched the anime. And yes, the first small bit does fit my request quite well. It doesn't matter to me whether the girl falls for the guy while he tries to play matchmaker, or the guy is just too blind to realize that he's the one she loves. My only problem with Ore Monogatari is that that plot was very short. The series more than makes up for it with the incredible feat of making a happy couple that refuses to be separated entertaining, in defiance of all the writers that seem to believe that happy is boring, but as far as my current request here, I'd like a bit more. For some reason, I think even a one-shot would fit this better, since its story is focused on this conflict instead of the conflict being a small preamble. And yes, one-shots are completely fine. Sometimes that's all it takes to tell a truly moving story.
