We could start listing off 100's of anime you should watch, but it would be much more effective if you elaborate on what specifically you're looking for and what you've already seen. A MAL account would be nice.

I haven't watched any anime yet I mostly read manga rather than watch.

I like all genres of Manga and anime and I want to know what you guys think is a good anime that I should begin to watch.

So basically I am asking what anime do you guys watch.

Usagi Drop is very cute
Spice and Wolf journey, adventure without the action, trading stuff
Shakugan no Shana solid first season, dragging second season, epic third season, action+fantasy
Soul Eater for action+comedy
Shinsekai yori complex intriguing plot with superpowers

Elfen Lied quite old so low graphic, gore, nudity, heavy plot, that was my first anime, but I'd only recommend this if you can stomach all that

some newer and cuter stuff would be:
Kyoukai no Kanata fantasy, action, romance
Sekai Seifuku - Bouryaku no Zvezda comedy, action
Hataraku Maou-sama! comedy, action, romance
Tonari no Kaibutsu-kun romance, comedy, drama

I got a recommendation for Katanagatari
very intense, brutal, the whole super-swordsmen fantasy package, very good characters, but beware, it is the mixture of a fairy tale and a regular theater drama, huge plot under a sometimes cute, sometimes rough surface
heavy
you have ben warned...

I made a list specifically for this type of request a while ago. So it's not the most up to date. Although, it's not like there'd be many to add.

http://www.listal.com/list/silent-killers-essential-anime-list

My personal favorites are
Last Exile
Cowboy Bebop - It's a really great english dub
Ghost in the Shell: Stand Alone Complex
any movie by Satoshi Kon - seriously, they're all good
The Twelve Kingdoms
Toradora
Code Geass - surprised the shit out of me at how good it was. I thought they stopped making anime this good. Best series in the last ten years imo.
