... change the name of a manga in my list from their Japanese romanized title to a translated English title? For example, in my complete list I have Denei Shoujo and Kiseijuu but I would much rather them read Video Girl AI and Parasyte. Thanks, any help is greatly appreciated.

Yep, there is. You can add a series under any of its associated names by entering the name you want into the "Add Series" box in the "My Lists" section. (If you just click the add to list link on the manga's info page, it will be added to the list under its main name.)
