Well I'll try explaining this as well as I can, both from a gender-neutral, a girl's and a casual yaoi's reader point of view.

WARNING: HUGE GENERALISATION AHEAD

Girls, like guys have hormones.
Girls don't watch/like porn. coughmostofthemcough
Girls need to take out the hormones, so girls prefer yaoi for that.
Yaoi>>>Hentai/Yuri/whatever because girls sometimes get jealous on the big-boobed female in het relations, so they prefer for her to be replaced by yet another piece of sexiness, aka the uke (I guess this is the most important point)
Oh and girls actually prefer clean sex (..most of them..) and if you read some yaoi (again depends on the title) you'll see they never get terribly fetishist like hentai for example.
And another thing to the apparent abundance of yaoi: it's about as much as other titles, just that most of them are PWP one-shots, so that's why they appear to overflow all around. Because one "series" of yaoi (a oneshot)=one chapter of one long-running shounen-jump series. So take One Piece with around 400 chapters=400 series of yaoi.

And although I hate yuri, I have to admit it's pretty weird that there's so little of it. But the answer is simple: for guys there's -insertpornmagname- and asides manga, I'm disappointed in how few alternatives there are specifically made for girls.
