Okay, I know this topic might be defeating itself, but gonna try anyway. I looking for for a manga (preferably series not one-shot) where the romance completely surprises you, whether by the person you thought so and so would end up with wasn't who you thought, you didn't even see a relationship coming, or you just kept guessing how it would end.

Please no standard shojuo and josei. Other than that I could care less what else is in it.

it's atashi wa bambi, I think. And yeah it's a good read, I didn't even think that she would end up with that guy.

But it is Shoujo, so maybe not what you're looking for.

Well maybe someone will disagree with me, but the couples that got hooked in these manga aren't what I've thought at the start:

Ichigo 100% -> I still think Kawashita changed her mind in the making of it...
Fruits Basket -> well at least at the start I didn't think they'd get together.
School Rumble -> still running, but I'm pretty sure it'll not end as I imagine.

But probably my biggest "WTF, is this gonna end with this pair?!?" is the anime "Kimi ga Nozomu Eien".
