I'm trying to move on of my series from my "reading" list to my "unfinished" list, but that option doesn't appear from the drop down menu on it's page, and there's no option to move things around on the lists page either.

Is it because I have too many lists? I have two others besides the defaults...
If this is the reason, then I'm not sure what to do about it as there appears to be no way to delete unused lists either.

I'm conscious I might be missing something fairly obvious here- I haven't used this site in a while, so I'm not sure which updates have been made... 😕

You have to first move them to your "On Hold" list before you can move them to "Unfinished."
