for the most part, i have been reading and watching these just as they come up and not really understanding the depth
and just playing the .hack games whenever i feel like it

there are maybe other topics on this but i didnt find any

Gundam has no order.

Gundam00 is different than Gundam Wing, for example. They're separate series.

And Higurashi can mostly be read in a random order as well, though there are parts that you'd rather leave for last, since those are the "true ending".

i only know the anime series of macross without including the OVA and movies but if it helps you.

For Higurashi, it's question and then answer, since a lot of unresolved stuff is explained in the answer arc.

For Gundam, I'm not sure since I had seen only a couple, but I had seen a chronology around. I would watch them in the order they were made.

For Macross, I think the order tricki gave you is ok. Chronologically it would be Macross Zero (OVA), SDF Macross, Macross Plus (OVA/movie, I would reccomend the OVA since it's longer), Macross 7, Macross Frontier. I would reccomend to watch SDF Macross first, then Macross Plus and then Macross Zero, Macross 7 and Macross Frontier are optional 🤣
