I would have to say anything by Within Temptation. The lyrics and their usage of instruments is what makes their music so beautiful.

Quote from Coluche
If one day you feel useless and depressed, remember: one day you were the fastest spermatozoon of all.
The speed of light is faster than the speed of sound, which is why sometimes people look bright until they start talking.

Oyf'n Pripetshok off the Schindler's List soundtrack. It's an old yiddish lullaby that's sad and haunting and gorgeous for it.
.hack//SIGN - Foreigners has this great gypsyish feel that's so vivid I picture old world Europe (mostly Prague) whenever I hear the song.

Harmony of December by KinKi Kids.
A lot of their songs are really beautiful, but this one is my favorite. It's very Christmas-y and I think both Christmas and Winter are very beautiful. The lyrics are so romantic and sweet without coming off as fake. There is also a dance for it which is mainly interpretive and it's kind of resembles sign language, it's simply gorgeous!
Back with more later~

Same here. Too bad more people can't appreciate how brilliant he was.
Peach Plum Pear - Owen Pallett
(Because I know, no one would think the original was as beautiful.)

Good topic. This is going to be a long one. [Edited]

Stan Rogers (small clip) - Northwest Passage: Not his most beautiful song lyric-wise, but the a cappella Northwest Passage emphasizes the passion he has for singing. Amazing harmony.

Eva Cassidy - I Know You By Heart (cover): Her vocals are unmatched by any female artist I've seen. Her live versions at Blues Alley just prove the power of her range, each note is ridiculously clean. Nothing needed to make her voice sound better.

Simon & Garfunkel - The Boxer: Self-explanatory. Closely tied with America.
http://www.youtube.com/watch?v=Ta0a3DFUU0Y
Gordon Lightfoot - If You Could Read My Mind: Timeless. The lyrics are really the main showcase in this song - simple music accompaniment accentuates that.
http://www.youtube.com/watch?v=N7kPHMpuLxc
Maria Callas - La Mamma Morta: I like this clip especially because it has the English translation of the lyrics. Anyway, it's freaking good. Powerful to say the least.

Martin Sexton - Black Sheep: This performance is b-e-a-u-t-i-f-u-l. He's personality and presence embodied in each of his songs, coupled with phenomenal lyrics and a surreal voice.
BUT! My #1 choice is:

Bruce Springsteen and the E Street Band - New York City Serenade: My God, this is freaking fantastic. I can't even name all the genres of music he covers in this song. Key moments include his first raspy "Billy" and that blend of Chopin-esque piano with folk bluesy guitar and sax. Not to mention the phenomenal lyrics. Revolutionary music.
There's a plethora of others:
Danny Boy & Loch Lomond - The Three Irish Tenors (John McDermott).
Autumn's Here - Hawksley Workman
Paris - Gordie Sampson
The Story So Far - Flogging Molly
Hymns are pretty freaking awesome too.
It's psychosomatic. You need a lobotomy. I'll get a saw.
You gonna do somethin'? Or are you just gonna stand there and bleed?
