Ok... So I decided to return to my childhood and downloaded all the Macross anime that I could find...

Macross Zero (2002)
Super Dimension Fortress Macross (1982)
Macross Plus (1994)
Macross 7 (1994)
Macross Dynamite 7 (1997)
Macross Frontier (2007)

But in which order should I actually watch them?
In order of release or chronologically?

~1700 ongoing...

Do this:
Macross Zero (2002)
Super Dimension Fortress Macross (1982) - Then the (better) 1984 movie. Or even better, only the movie.
Macross Plus (1994) - Look up the new scenes from the messy movie version afterward.
Macross Frontier (2007) - Watch the 2 movie reimaginings thereafter... I guess which may be the canon version but the Frontier continuity is a mess, well little of the franchise makes sense. The show was better.

You forgot Super Dimensional Fortres II: Lovers Again as you should and Macross 7 (+ manga / OVA) needs to stay buried too but listed to the 10/10 OSTs at all cost.
Why does the related Macross FB 7: Ore no Uta o Kike! even exist and The Super Dimension Fortress Macross: Flash Back 2012 is only a music video compellation but it is the epilogue to Do You Remember Love? (1984) remake film. My brain just gave out and don´t invest feelings in any of the vapid romances unless it you are watching Plus due to Watanabe and stuff.

Macross Delta is coming and Macross was part of the Super Dimension trilogy (only the related Orguss 02 is good) while the messy Robotech has its own continuity and... 😐 By Zodd. Gundam is easer to explain.

Edit: What an opening so don´t sleep on Orguss 2 which came out the same time as Plus.

Word of warning, Macross 7 sucked hard. All except for the original had lackluster endings. If you are going to watch the first movie, get a Japanese subtitle version. The dub will make your ears bleed.
