MONONOKE (not Princesss Mononoke, btw, just Mononoke.) I can rewatch it whatever mood I'm in. The main character is just so cool!
Also Chrome Shelled Regios: Missing Mail.
Oh, and Avatar, but it's harder to find the video clips.
These being the only anime I have watched, I usually (always) watch one of these when I want to watch an anime.

Well, this is kind of cheating but I have a manga I keep reading over and over again. It never gets boring. Skip Beat. It's funny, cute in reasonable levels, makes exactly as much sense as it should and things happen, interesting things, so it's always fun to re-read it
edit: and I remembered the anime I can watch over and over again; Mononoke Hime, Hauru no Ugoku Shiro and Aoi Tamago

Never, I only watch an anime once and that's it. Or else I'll be wasting my time.

For me it's Ghost Hunt, Lucky Star, Gundam Seed, Fullmetal Alchemist (the original), and Last Exile. I just watch these over and over and over. I can't get enough. Code Geass is another one, but only when I've loaned out the others.

Robotech (Americanized version of Macross). Sci-Fi, mecha, drama and romance...It's one of my definite favorites.

Full Metal Alchemist! Every time I watch it, I can't help but admire all the philosophical stuff that is going on in it! <3
Um... Do Studio Ghibli stuff count too? I've watched Princess Mononoke, Howl's Moving Castle and Spirited away at least twice!
