The only thing I can think of is Gregorian and their stuff.

Maybe check out Arcana, they're sort of gothic and neo-folk/classical.

No, they're not really monks. I think one of them owns a gym or is a fitness instructor.
They just get a kick out of wearing robes and singing chants.

Gregorian Chant is beautiful. Nothing more powerful than pure human vocals.
Love classical music as well. Schubert, Satie, Tchaikovsky, Wagner etc.

Since you also mentioned classical, i take it that it's open to all and not just the chants.

A new take on an old favorite; I suggest Maria Ave by Joe Hisashi for the movie The Departed. Awesome good, heartwrenching if you've watched the movie.

Also, me likes Orff''s Carmina Burana. (:

NO!! Not Gregorian chants!! cringe I remember two years ago....my music class was kept in during interval because someone was being really annoying in class. We suffered by listening to Gregorian chanting for 25 minutes!! The horror!
I've studied modes a few weeks ago and we had to listen to some more Gregorian chanting!!

I'm afraid I'm not with Gregorian chanting....
