A well written fantasy story

I want to read a fantasy manga that's fun and well written. Isekai is okay, but most I find really generic and cliche.
An interesting MC and side characters. It doesn't necessarily have to be about adventuring or killing monsters either.
Fantasy has been pretty popular these days, so I don't have the courage to go through all of them one by one. I also most are kinda boring with the MC starting off OP and better than everyone. I'd appreciate it if there was more development in the MC rather than having him or her start off incredibly powerful with ALL THE MAGICZ

Dungeon Meshi is outstanding both as a good mix of adventure, camaraderie and funny bits, but it also has a very well fleshed out system for how the dungeons in the world actually work instead of kind of just being there.
