So, I've seen that the "World Transfer" Genre is getting pretty popular. Well, its been popular for the last few years, but its really starting to pick up recently, when more and more variety and ideas popping up.
That being said, I've also noticed a interesting trend in the Genre; as a Rule of Thumb, you can guess how the Story will progress, based on the Setting and mechanics.
To clarify, I've found that most "World Transfer" Stories, no matter the method (Reincarnation, Body Transfer, Summon, etc etc), fall into 1 of 2 "Big" Categories. Xianxia and Slice of Life.
I've found that more Xianxia based novels, such as Douluo Dalu, Tales of Demons and Gods and Doupo Cangqiong, then to follow a more Fast Paced and plot focused Action (as in pinpointed and set), where as more "Game" or Knowledge based Stories, such as [Kamitachi ni Hirowareta Otoko], [10 nen goshi no HikiNiito o Yamete Gaishutsushitara Jitaku goto Isekai ni Ten’ishiteta], [Magi Craft Meister] follow a more "Slice of Life route, with a Slower plot, broader scope and calmer feel.
While the type you prefer is going to vary Person to Person (I Personally prefer the Mushishi vibe of the latter), Its interesting to see how these stories follow parallel formats like this.

Can anyone think of any out there that DON'T really fall into either of these Categories? or changing it up compared to others in the Genre ?

I personally think that you're categorizing it a bit way too broadly for it to not fall into either category. What you're saying is basically action-ish(not all action-ish novels equates to xianxia though) and a focus on daily life instead.

While there are many that falls into either as the main focus, there are still plenty of others that are a mixture of both, though with most leaning quite deeply into the slice of life parts(or at least those that I've read anyway).

PS. Xianxia is more...well...more on the cultivation and stuff like that. Not all action focused ones does that though.
