Plot/Story
At first hand Shingeki no Kyojin's (from now on it's going to be addressed as SNK) plot looks like a game of death or a survivalist type manga, where the main focus it's on seeing a group of characters trying to survive in extreme scenarios, in this case the scenario it's giants that look extremely close to humans. And while there's certainly some of this survivalist aspect in SNK, you're quickly going to find out that the focus of the manga it's not really on killing titants but on the politics of this world, something that for some may seem extremely fascinating at face value but for me, the way that this is executed was lack luster to say the least. I'm not going to get on spoiler territory, but let's just say that for a manga that got popular mostly for the action scenes and the big amount of graphic violence, you're going to find out that a huge amount of chapters are dedicated to mostly people just sitting around talking. One thing to keep in ming with the plot it's that SNK it's not a manga that likes to take a break from the plot, the plot it's always moving and doesn't have much breathing room a thing that for some people may be a huge plus.

Characters
The characters are by far the main reason why i don't enjoy this manga that much, of course there are some amazing characters, Reiner comes to mind inmediately, but the vast majority of characters are one dimensional. Let's look at Sasha (potato girl) as an example, she's one of my favorite characters, but i can't deny that her personality it's really shallow, she likes food, she's some what dumb and that's mostly it. Mikasa suffers something similar, while she's not as shallow on comparison to most of the cast, her personality quicly becomes "don't touch Eren unless you want to die". She's a good character, but the fact that she just lives for Eren becomes boring really fast and yes I'm aware that there's a narrative reason for way she is the way she is, but that doesn't make it any less boring.
Some people dislike Eren and call him a cry baby, but I honestly don't mind him, if anything he grew on me pretty fast. I would say the main reason why a lot of the characters never grew on me it's because we never get to see much of them just hanging around, sure they are soldiers and they can't afford to sit around and do anything, but we could just how they eat togheter or something the way we saw when they were training.
Also huge shoutout to commander Erwin, he's probably my favorite character.

Drawing Style
Inexpressive comes to mind when i think of the drawing style, sure the anatomy it's as good as it gets and the art style is certainly realistic while also unique, but most of the time the characters look super stiff, a good amount of them suffer from same face syndrome, something that I usually don't mind but here, where almost everyone wears the same uniform things can get pretty confusing pretty quick. An lastly the art style it's simply not aesthetically pleasing for me.

Enjoyment
I'm not going to say that I had a bad time reading it, but like i said before the huge amount of people sitting around talking made my experience fairly boring, listen I'm down for a manga where dialogue it's the main focus and it could've been really interesting here, like watching people disscus theories about the titans or talking about developing new weapon but that's not what happened, what we get it's a lot of scenes of people creating a plan, then executing that plan and discussing what could go wrong in said plan, so sadly I spent a lot of my time reading SNK somewhat bored. But when the actions peaks up I was definetly hyped up, so again, I cannot say that I had a bad time, but I certainly didn't have the time of my life either.

Overall
At last I just have to say that this is the second time read SNK with the hope of getting up to date before the anime comes out (even tho i don't really watch the anime) and my overall opinion got better in some areas while also getting worse in others. Now I grew appreciate the fact that SNK it's not just another survival manga and it's trying to be something more ambitious, But now I'm also more aware and annoyed about how convenient a lot of the stuff in this manga is, sometimes to the point where it hard to believe that it's not just a joke because stuff that don't really matter become related for some reason. Like how Mikasa ended up being related to some important politician later on.

I'm also extremely annoyed about how long it took for the big war to start, some of the time just dedicated to people sitting around discussing could've been used to move the plot faster if the mangaka wanted to be so dedicated to the plot and the principal reason why it annoys me so much it's because i think this war it's the most interesting thing to happen in the manga, specially all the new dynamics we're seeing, like how Eren it's becoming what he hates and Reiner regretting his actions up to the current point in the history.

So, should you read SNK? yes, but it's probably wiser not to binge read it.
