I thought art is pretty weird at first, but later I realized how well it works with the story. Plot is very good for a shounen manga, and humor is perfect. There's enough fanservice, but not annoyingly much. However, I must say that characters are what makes Soul Eater this good. They are all likable, strong and very much not-perfect, and that's what makes them interesting.
What's most amazing is well-mixed amount of hilarious and touching/emotional moments - never going into irritating extremes like many other manga.

my first thought about the art was...."ick". and although it's really easy to predict what's going to happen, after about two chapters I thought this manga was okay. so i'll also try to watch the anime.

EDIT (10/29/08): after about 8 months of reading this I am seriously embarrased about this comment xD
(mostly because I love SE now)

It's unique, funny, and kinda weird stuff. It's plotline, art, humor, reference is above average. But the sinker that makes the manga crap is it's boring attacks and names. Death cannon, Soul (Insert action here) makes the action lame and the characteristics of each skill is bad. Sometimes it's confusing to follow up the story. But hey, it's something anyone should read if they love monsters and fan service <3
EDIT:
I stopped reading this manga 6 months ago, I take back everything I said, this manga is really nothing but a bunch of generic likeables that readers would like(Big explosions, tits, generic references of deities to make the manga seem 'not random'). In the beginning, I thought it would be interesting if it was just Maka and Soul Eater(What kind of name is that?). Plus, there are random names of attacks that the mangaka came up with right off the bat. This is a mainstream disappointment.

This is a funny manga. Also, it has good action, but what u really see is the humour in the story, and the character development is preety good, and the story has a dark side to it, and is very suspensful.

The art really is great and the idea behind the story is pretty good as well.

Although the story doesn't flow together perfectly, the pace of the story and the way it is told makes up for it. Character-wise the manga does a good job.
