hmm.....if i remmeber correctly Ultra Red was about as close as you can get to an MMA manga, but i dont know for sure, only read the 1st chapter b4 i dropped it

also in shamo he enters n underground MMA fights from time to time, also there was a brazillian jiu-jitsuka added to the story the last time i checked, as a well as a fighter who was going to learn various others forms, so it should be turning pretty MMA'ish soon

I don't think there's alot manga about MMA. But here's the three closest ones that come to my mind. Teppuu is a new manga about MMA, you should check it out.
