The Universe
Human Stupidity

Tokimeki Tonight she's only half vampire but I think it fits.
Rosario to Vampire I'm not a fan of it tough

I could also add Kurozuka, because there is a romance in it, but it's basically an action/adventure manga with a little gore, so you're advised.

Blood + - it's shounen, but there's romantic subtext, at least from the guys.

Dance in the Vampire Bund is between a vampire and a werewolf, but he does not change forms too often (out of 20 chapters, maybe 6 times). So, it seems more like a vampire and a human. Very good series that I highly recommend. She is a loli though...if that bothers you.

Tsukuyomi - Moon Phase is definitely the manga for you.
