I'm a flute and piano player so I hear a lot of classical music that is good. Especially the modern classical. And then I have to say that I like "Cliffs of Dover" by Eric Johnson a lot (yay Guitar Hero!)

Air (for the most part, instrumental)

The Old Boy OST is nice. Never watched the movie. But the soundtrack, it's nice.

Most songs by Mogwai pretty well done.
Example: http://youtube.com/watch?v=K_NrZCZwlhc
(the video is a bit weird, though)

get the "Happy Songs For Happy People" album first, it's really easy to get into

edit: Well done live performance of that album's first song: http://youtube.com/watch?v=UlbDUde6X3o

Yann Tiersen and Jon Brion are great! Compositions by Ennio Moricone are okay, too.

Since there are no vocals in most experimental music I consider them experimental too(?). I'm recommending Aphex Twin, Amon Tobin, Squarepusher and Venetian Snares.

I also like the tracks they used for the movie "28 days later"

OST music is a bit different from what I think of as 'Good Instrumental Music' sure, it's instrumental, and sure, it's good, but the aim of the artist and the composer was to provide a backdrop for the action taking place on screen. Different from music made to stand alone.
